Ingredients

  • 1 x 500g block puff pastry
  • 1 x 500g pack British pork sausage meat
  • 2 tbsp finely chopped sage
  • ¼ tsp ground cloves
  • ¼ tsp ground mace
  • a sprinkle of plain flour, for dusting
  • 1 large egg, beaten

For the relish

  • 1 x 250ml jar cranberry sauce
  • zest of 1 orange, pared
  • 3 tbsp red wine (or port)
  • 1 cinnamon stick
