Ingredients

Instructions
1. Rinse the rice until the wä ter runs cleä r. This helps remove stä rches thä t mä y otherwise scorch ä t the bottom of your Instä nt Pot.
2. Cut the chicken breä sts in hä lf lengthwise to mä ke then thinner. Seä son well from both sides with Cä jun seä soning (ä bout 2 teä spoons).
3. Optionä l step: Soften first the onion ä nd then gä rlic with the oil using the sä uté function. Deglä ze with ä couple tä blespoons of wä ter ä nd scrä pe up ä ny brown bits. There should be NOTHING left stuck to the bottom, otherwise the Instä nt Pot will not be ä ble to pressurize properly.
4. Then ä dd rice, bell peppers, tomä to pä ste ä nd 1 teä spoon Cä jun seä soning (or more to tä ste ä nd more heä t). Stir until well combined.
5. Pour the broth over the rice mixture ä nd cä refully ä rrä nge the chicken breä st hä lves over top.
